Cast Iron Herb Crusted Salmon Fillets with Baby Greens

    Makes: 4-6 Directions Step ONE Take the fish out of the fridge for as long as 1 hour before cooking (if you have the time). Step TWO Soak your raisins or currants while you are getting everything else ready. Step THREE Make your Herb Mixture by chopping and mixing everything together. Step FOUR Rub the herb mixture all over the fish. Step FIVE Preheat a cast iron or large fry pan over medium high heat. Step SIX Put the oil in the pan, when the oil is shimmering, add the seasoned fish, skin side down and the tomatoes and cook for 3 minutes. Decrease the heat, flip the fish, toss the tomatoes around a little and cook the flesh side for an additional 4-5 minutes. Turn off the heat and let the fish rest in the pan while you prepare the salad. Step SEVEN Prepare the salad. Mix the apple cider vinegar, olive oil, mustard, honey, salt and pepper in a large mixing bowl. Place the greens, cucumber and soaked raisins/currants in the bowl with the dressing, toss. Step EIGHT Place the fish and tomatoes on individual plates and place the salad on each plate slightly on top of the fish.
